Raita is a wonderful way to balance a fiery chutney, grilled meats or curry. The yoghurt helps balance any spicy heat whilst the mint brings a refreshing and slightly sweet flavour. The addition of spices and seasoning adds a depth and savoury hint to the dish.
Collect together your equipment (see Recipe Notes below) and ingredients.
Measure out the ingredients, except the milk, into a mixing bowl and stir well.
Slowly add the milk, mixing, until you reach the consistency you like.
