Delicious egg noodles, sesame seeds, garlic, ginger and spring onions coated in kecap manis and soy sauce, served with egg - either fried with the noodles or cooked separately and served on top. Sweet and salty, these wonderful noodles come together in minutes and can be easily adapted.
Collect together your equipment (see Recipe Notes below) and ingredients.
Tip the sesame seeds into a dry pan and cook over a moderately hot heat, stirring frequently, until lightly browned. Keep a close eye on them - it should only take a minute or two. Tip out of the pan/wok and set aside.
Add the oils to the pan along with the crushed garlic, grated ginger and chilli flakes. I like to grate the ginger directly over the pan to catch any precious juices.
Cook over a moderate heat for 1 minute until aromatic.
Add the noodles, soy sauce and kecap manis. Mix well and heat everything through.
If adding a fried egg – at the same time, heat some oil in a separate pan over a moderately hot heat and add the egg. Cook either sunny side up or flipped until cooked to your liking.
Add the spring onions, fresh herbs and toasted sesame seeds and stir into the noodles. Taste to see if you need to add extra salt and pepper.
Serve garnished with sliced spring onions and extra sesame seeds and, if chosen, with the fried egg on top.

If adding egg – push the noodles and vegetables to the side of the pan/wok, add a little extra oil and tip in the beaten egg.
As the egg starts to cook, move it around the pan with a spatula.
When the egg is cooked, add the spring onions, fresh herbs and toasted sesame seeds and stir into the noodles with the egg. Taste to see if you need to add extra salt and pepper.
Serve garnished with sliced spring onions and extra sesame seeds.
