Ingredients

  • 100g finely grated orange chocolate – I use Terry’s
  • 250g fresh double cream
  • 200g sweetened condensed milk
  • 25g unsweetened cocoa
  • ¼ teaspoon instant coffee
  • pinch of fine salt
  • Grated rind of 2 oranges

Instructions

  1. Collect together your equipment (see Recipe Notes below) and ingredients.

  2. Roughly chop the chocolate and blitz in a food processor until it forms small crumbs. Alternatively, finely chop or grate the chocolate.

  3. Beat the cream and the condensed milk with an electric whisk until it forms soft peaks.

  4. Place a sieve over the bowl and add the cocoa, coffee and salt.

  5. Roughly stir in with a spoon and then whip, with an electric whisk, until thickened.

  6. Add the chocolate orange crumbs and the grated orange zest. Fold in – do not over mix at this stage.

  7. Pour into a freezer proof container. Cover with baking parchment, seal with a lid and freeze for a minimum of 6 hours. Voila!

Recipe Notes

Equipment:

  • Kitchen scales and measuring spoons
  • electric whisk and  mixing bowl
  • sieve
  • mini food processor or grater or chopping board and knife
  • freezer proof container with a lid
  • baking parchment

Coffee and salt

You cannot taste the coffee, it is there as it helps to enhance the flavour of the chocolate. I always add a tiny bit of salt – it really helps to enhance all the flavours.
