Oven-Baked Fries

Delicious oven-baked fries, crispy on the outside with soft, melt in the mouth potato on the inside. Serves 1

Ingredients

  • 250g all purpose potatoes. I use Maris Piper or King Edwards
  • 1 teaspoon fine salt
  • 1½ tablespoons flavourless oil e.g. vegetable or sunflower
  • freshly ground sea salt and black pepper

Instructions

  1. Collect together your equipment (see Recipe Notes below) and ingredients.

  2. Preheat oven to Fan Oven 180°C /200°C/400°F/Gas 6

  3. Slice the potatoes into thick fries. There is no need to peel the potatoes unless you particularly want to.

  4. Transfer to a saucepan with salt and cover with boiling water. Bring back to the boil and simmer for 5 minutes.

  5. Drain immediately leaving the potatoes in the sieve over the saucepan for 5 minutes to dry a little.

  6. Pour half the oil onto a baking tray and then tip on the potatoes. Drizzle over the remaining oil.

  7. Use your hands to make sure all the potatoes are covered in oil. Be careful though as they will be quite fragile.

  8. Spread out on a baking tray and grind over some sea salt and black pepper.

  9. Cook in the centre of a pre-heated oven for 35 - 40 minutes until crispy on the outside and lightly browned, or until cooked to your liking. Turn half way through cooking.

  10. When cooked and before you serve, tip the fries onto a warmed plate or bowl lined in kitchen paper to absorb any extraneous oil.

Equipment:

  • kitchen scales and measuring spoons
  • chopping board and knife
  • saucepan and sieve or colander
  • baking tray
  • plate or bowl lined with kitchen paper

Cooking Potatoes:

Potatoes are normally covered in cold and not boiling water as this helps the potatoes cook more evenly. In this instance though, we are only par-cooking the potatoes for a short time, so we add boiling water. The outside of the potatoes will cook more quickly than the inside. You want this as the softer outside will crisp up nicely whilst the inside is softening in the oven.
