Sweet and Spicy Roast Nuts

Shiny, crispy nuts coated in a delicious sweet and spicy combination of honey, chilli, smoked paprika, salt and cinnamon. Serves 4

Ingredients

Nut mix:

  • 200g mixed nuts. I used walnuts, almonds, cashews
  • 1½ tablespoons honey
  • ½ tablespoon olive oil

Spice coating:

  • 1 tablespoon olive oil
  • 1½ teaspoons cinnamon powder
  • ¼ teaspoon chilli flakes
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon freshly ground black pepper
  • ⅛ teaspoon powdered ginger
  • ⅛ teaspoon ground cloves
  • ⅛ teaspoon fine salt

Instructions

  1. Collect together your equipment (see Recipe Notes below) and ingredients.

  2. Preheat oven to Fan Oven 150°C/170°C/375°F/Gas 5

  3. Prepare and cook the nuts: tip the nuts into a mixing bowl and add the honey and olive oil

  4. Mix thoroughly until all the nuts are coated in the oil and honey mix.

  5. Tip out onto a baking parchment lined baking tray and spread the nuts out so they are not touching. Put in the oven for 10 minutes.

  6. After 10 minutes, remove from the oven and stir well. Spread the nuts out again and put back into the oven for 5 minutes.

  7. Prepare the spice coating: as the nuts cook, pour the remaining oil into the mixing bowl. You can use the same mixing bowl – there is no need to wash it.

  8. Add the spice mix and stir thoroughly.

  9. When the nuts have been roasting for a total of 15 minutes, remove from the oven and add to the spice and oil. Thoroughly mix.

  10. Place back on the baking tray and spread out.

  11. Bake for a further 10 minutes, giving them a stir after 5 minutes. Leave to cool and dry on the tray. Any extra liquid on the nuts should be absorbed.

  12. Serve!
