Macerated Roast Blueberries

Macerated Roast Blueberries are the perfect accompaniment to game, but are also delicious with pork, and I love them with roast chicken and a cheesy nut loaf! Heck, pour on some cream or ice cream, and they make an amazing dessert!

Serves 4 as an accompaniment to a main dish, and 1 for dessert

Ingredients

  • 200g fresh blueberries
  • 1 tablespoon caster sugar
  • 1 tablespoon vodka

Instructions

  1. Collect together your equipment (see Recipe Notes below) and ingredients.

  2. Pre-heat the grill setting, on your oven, to high.

  3. Scatter the blueberries on a baking tray and sprinkle on the caster sugar.

  4. Place under a pre-heated grill and cook until the blueberries have burst – this will take around 5 - 10 minutes.

  5. Tip into a small bowl, leaving behind any burnt sugar and juice from around the edges.

  6. Sprinkle over the vodka and set aside to macerate. Set aside for a minimum of 10 minutes, but ideally for an hour or more.

  7. Delicious served with game, other roasts, such as pork or chicken, and cheesy nut loaf.
