Macerated Roast Blueberries are the perfect accompaniment to game, but are also delicious with pork, and I love them with roast chicken and a cheesy nut loaf! Heck, pour on some cream or ice cream, and they make an amazing dessert!

Grilling and macerating the blueberries, with a touch of sugar and vodka, concentrates and enhances their flavour and texture; they bring a welcome, sweet, fruity balance to a range of protein rich meat dishes. They are also exceptionally quick and easy to make; you’d be mad not to!

How to make Macerated Roast Blueberries

Collect all your ingredients together:

  • fresh blueberries
  • caster sugar
  • vodka
Served here with Pan-fried Venison Fillet, Potato Cakes, Celeriac Purée, Roast Cabbage, Red Wine Jus and Macerated Blueberries – a dish from Lyngen Lodge

How to make this wonderful condiment:

  1. Pre-heat the grill to a high heat.
  2. Scatter the blueberries on a baking tray and sprinkle on the caster sugar.
  3. Place under a pre-heated grill and cook until the blueberries have burst – this will take around 5 minutes.
  4. Tip into a small bowl, leaving behind any burnt sugar and juice from around the edges.
  5. Sprinkle over the vodka and set aside to macerate.
  6. Delicious served with game.

Serves 4 as an accompaniment to a main dish, and 1 for dessert

Ingredients

  • 200g fresh blueberries
  • 1 tablespoon caster sugar
  • 1 tablespoon vodka

Instructions

  1. Collect together your equipment (see Recipe Notes below) and ingredients.

  2. Pre-heat the grill setting, on your oven, to high.

  3. Scatter the blueberries on a baking tray and sprinkle on the caster sugar.

  4. Place under a pre-heated grill and cook until the blueberries have burst – this will take around 5 – 10 minutes.

  5. Tip into a small bowl, leaving behind any burnt sugar and juice from around the edges.

  6. Sprinkle over the vodka and set aside to macerate. Set aside for a minimum of 10 minutes, but ideally for an hour or more.

  7. Delicious served with game, other roasts, such as pork or chicken, and cheesy nut loaf.
