White Crab on Sour Dough Toast

Sometimes the simplest food made from the best ingredients can create the most delicious meals. The sweet and delicate flavoured crab is mixed with some mayonnaise and salt and pepper and served on warm toasted sour dough bread. With a little kick from some cayenne pepper and zing from a squeeze of lime, this fuss-free but somewhat luxurious snack is a hands down winner.

Ingredients

For the toast:

  • 2 thick slices of bread such as brown or sour dough
  • 1 tablespoon mayonnaise

For the crab topping:

  • 180g white crab meat
  • 2 tablespoons mayonnaise
  • 1/16 teaspoon sea/kosher salt
  • 1/16 teaspoon freshly ground black pepper

To serve:

  • Sprinkling of cayenne pepper
  • 1 teaspoon chopped coriander
  • 2 wedges of lime 
  • Drizzle of good quality extra virgin olive oil (optional)

Instructions

  1. For the crab topping: mix all the ingredients together, taste and adjust seasoning

  2. The toast: lightly toast the bread and spread ½ tablespoon of mayonnaise on each slice.

  3. To serve: top each slice of toast with an equal quantity of crab and transfer to warmed serving plates. Sprinkle with cayenne and coriander and serve with lime wedges. Drizzle with olive oil if desired.
