White Crab on Sour Dough Toast

Simple name, simple food, exceptionally divine lunch! What can I say? Sometimes the simplest food made from the best ingredients can create the most delicious meals. The sweet and delicate flavoured crab is mixed with some mayonnaise and salt and pepper and served on warm toasted sour dough bread. With a little kick from some cayenne pepper and zing from a squeeze of lime, this fuss-free but somewhat luxurious snack is a hands down winner. Scatter on some coriander or parsley and/or drizzle on some good quality olive oil if you like, but whatever you choose, this recipe is guaranteed to satisfy your hunger and impress your guests at the same time.

I made it today for Andrew when he came back from his first game of golf after the course re-opened after shutting as part of the COVID 19 restrictions. It was a beautiful day and he came back invigorated and starving. It was definitely a treat to match his mood. Our poor dog, on the other hand, can no longer be walked at the golf course and as yet we cannot let her off the lead in London parks – hopefully soon. Charlotte took her out for a run but it’s not the same as being able to run freely and explore.

How to make White Crab on Sour Dough Toast

This is so simple, it barely needs a recipe but just in case, all you need to do is:

  • mix the white crab meat with the mayonnaise, salt and pepper
  • lightly toast the sour dough bread and spread with mayonnaise
  • sprinkle on the cayenne pepper and if you like, some chopped coriander and a drizzle of olive oil
  • serve with wedges of lime. That’s it! Heaven on a plate.

In truth, there is probably enough crab for 3 slices of toast; however as a rather luxury lunch or brunch, I like to serve a really healthy portion of crab but this is totally up to you. If I was serving this as a starter, on the other hand, I would stick to the proportions of crab to bread ratio but I would use smaller pieces of bread, in which case it would definitely serve 3 – 4 people. Any bigger and it would be too filling for most people.

Ingredients

For the toast:

  • 2 thick slices of bread such as brown or sour dough
  • 1 tablespoon mayonnaise

For the crab topping:

  • 180g white crab meat
  • 2 tablespoons mayonnaise
  • 1/16 teaspoon sea/kosher salt
  • 1/16 teaspoon freshly ground black pepper

To serve:

  • Sprinkling of cayenne pepper
  • 1 teaspoon chopped coriander
  • 2 wedges of lime 
  • Drizzle of good quality extra virgin olive oil (optional)

Instructions

  1. For the crab topping: mix all the ingredients together, taste and adjust seasoning

  2. The toast: lightly toast the bread and spread ½ tablespoon of mayonnaise on each slice.

  3. To serve: top each slice of toast with an equal quantity of crab and transfer to warmed serving plates. Sprinkle with cayenne and coriander and serve with lime wedges. Drizzle with olive oil if desired.
