Taid’s Chicken Butty with Avocado, Lettuce, Tomato Cucumber and a Yoghurt, Mustard Dressing

Using a fresh, seeded brown loaf and salted Welsh butter, this poached chicken sandwich is loaded with avocado, lettuce, cucumber and tomatoes and drizzled with a light and healthy yoghurt and mustard dressing. Fresh and healthy but substantial enough for a good lunch, and wonderful for a picnic, this sandwich comes together quickly. Furthermore, it can very easily be adapted to suit your tastes and the ingredients you have in your fridge.

Serves 2 but is very easy to up or downscale

Ingredients

Filling:

  • chicken breast. One chicken breast, when sandwiched with other ingredients, should be sufficient for 2 people. (Or use cooked chicken.)
  • slices of bread. Use your favourite bread. The amount you need will depend on the size of the loaf and your appetite.
  • butter, I like salted butter.
  • gem lettuce leaves, Iceberg or spinach
  • ½ -1 avocado, mashed or sliced.
  • few slices of cucumber
  • few slices of tomatoes

Dressing:

  • 2 tablespoons natural yoghurt. You could use mayonnaise or salad cream.
  • ½ teaspoon Dijon or grainy mustard. If you prefer English mustard, just add a small amount and then adjust to your taste.
  • pinch of salt and freshly ground black pepper.

Instructions

  1. Collect together your equipment (See Recipe Notes below) and ingredients.

  2. Chicken: take the chicken out of the fridge about half an hour before you want to cook it, to make sure it is at room temperature. Bring a pan of water to the boil and lower in the chicken breast. Simmer gently for 5 minutes, turn the heat off, cover and set aside for 30 minutes. It should be cooked through after 30 minutes but double check by cutting into the thickest part of the chicken. If it does not look cooked, gently simmer it for a further 5 minutes, or until cooked.

  3. Remove the chicken from the pan and set aside until it is cool enough to handle. Dry with kitchen towel. Either slice or shred the meat.

  4. Salad: wash and prepare the salad ingredients.

    - tomatoes: halve and slice.

    - cucumber: slice.

    - salad leaves: cut or tear to fit the bread, if necessary.

    - avocado – peel, remove the stone and then mash. Slice, if you prefer.

  5. Dressing: simply mix the yoghurt with the mustard and some salt and pepper.

  6. Layer:

    - lay out slices of bread, spread the mashed avocado on half the slices and season lightly with salt and freshly ground black pepper. Butter the remaining halves.

    - top the avocado halves with salad leaves and chicken and drizzle with some dressing.

    - finish with the slices of cucumber and tomatoes and season lightly again.

    - top with the buttered bread and serve immediately. If not eating straight away, wrap carefully in baking parchment or cling film or pack in an airtight container.

Does the chicken sandwich really need a recipe?

We all have our favourite way to make it and our favourite ingredients. However, here are some things to think about with my favourite options:

  • chicken. If you have some cooked chicken, use this. Even quicker! However, poacheing chicken breast is a wonderful and very healthy way to cook it, whilst also ensuring it is moist and delicious to eat. Poached chicken works really well in salad dishes too.   • white, brown or sour dough bread? This is totally up to you. Use your favourite. I prefer brown and/or seeded bread.
  • butter or no butter? I like butter on my sandwiches, but when I am adding mashed avocado, as I did here, I often forgo the butter. Here I buttered only one slice of bread, and put mashed avocado on the other.
  • dressing. I love to add a dressing on a chicken sandwich, particularly when I have some salad in it too. You can use mayonnaise or salad cream, but I prefer some natural yoghurt seasoned with Dijon mustard, salt and pepper.
