Coffee Hug in a Mug studded with Chocolate
Single serving light and fluffy coffee flavoured sponge studded with chunks of chocolate served with cream, ice cream or as is - mixed in a minute and cooked in 2 minutes. Serves 1
Ingredients
Dry ingredients:
- 1½ tablespoons plain/all-purpose flour
- ½ tablespoon sugar – caster, granulated or brown sugar
- ⅛ teaspoon baking powder
- pinch of salt
Wet ingredients:
- 1 tablespoon and 1 teaspoon milk
- 1½ teaspoons sunflower or vegetable oil
Additional ingredients:
- ¼ teaspoon instant coffee powder
- 2 - 3 teaspoons chopped chocolate
Instructions

Measure the dry ingredients – the flour, sugar, baking powder and salt – directly into a microwave safe mug and stir to mix.

Add the oil and milk and stir to mix.

Add the instant coffee and thoroughly mix.

Stir in the chopped chocolate.

Cook in the microwave on high for 1 minute. Leave to sit for a further minute before eating.

To serve: sprinkle with icing sugar and eat either as is or with cream or ice cream
