Coffee Hug in a Mug studded with Chocolate

Single serving light and fluffy coffee flavoured sponge studded with chunks of chocolate served with cream, ice cream or as is – mixed in a minute and cooked in 2 minutes. I kid you not!!

Sometimes you just want cake and you need it now! I’ve tried many mug cakes and and I generally have 2 issues with them – they can be too rubbery in texture and they tend to be way too big . This is around the size of a medium cupcake and is very light and fluffy. Microwaving, as opposed to baking, does alter the texture of the cake and it is always best eaten very fresh but this really is the best I have come across. I am posting this specifically for Emma and her flatmates. They are all Exeter University students studying medicine but currently based in Cornwall. Unfortunately their oven has broken and they have been told that it cannot be fixed until after the COVID restrictions have ended. Emma is a keen baker and finds the whole process quite relaxing. This cake comes together so quickly, I’m not sure how therapeutic it will be but I can promise you the satisfaction of whipping up such a treat in such a short period of time (and then eating it!) will more than make up for any missed therapy! Coffee and chocolate are Emma’s favourite flavours in a cake, so I hope she will love this.

During these strange times we all need a hug from time to time and this little cake is definitely the next best thing.

How to make Coffee Hug in a Mug Studded with Chocolate

Collect all your ingredients together:

  • plain/all-purpose flour
  • sugar – caster, granulated or brown sugar
  • baking powder
  • fine salt
  • milk
  • sunflower or vegetable oil
  • instant coffee powder
  • chopped chocolate

Whip up that cake:

  1. Measure the dry ingredients – the flour, sugar, baking powder and salt – directly into a microwave safe mug.
  2. Stir to mix well.
  3. Add the oil and milk and stir to mix.
  4. Add the instant coffee and thoroughly mix.
  5. Stir in the chopped chocolate.
  6. Cook in the microwave on high for 1 minute. Leave to sit for a further minute before eating.
  7. To serve: sprinkle with icing sugar and eat either as is or with cream or ice cream
  8. NB Please note that the power in microwaves varies. You may find that you need to alter timings to suit your oven. When you have figured out the right length of time, make a note of it!

Ingredients

Dry ingredients:

  • 1½ tablespoons plain/all-purpose flour
  • ½ tablespoon sugar – caster, granulated or brown sugar
  • ⅛ teaspoon baking powder
  • pinch of salt

Wet ingredients:

  • 1 tablespoon and 1 teaspoon milk
  • 1½ teaspoons sunflower or vegetable oil

Additional ingredients:

  • ¼ teaspoon instant coffee powder
  • 2 – 3 teaspoons chopped chocolate

Instructions

  1. Measure the dry ingredients – the flour, sugar, baking powder and salt – directly into a microwave safe mug and stir to mix.

  2. Add the oil and milk and stir to mix.

  3. Add the instant coffee and thoroughly mix.
