Chicken, Brie, Cranberry and Chilli Sandwich with Spinach and Mayonnaise

A hot sourdough baguette sandwich filled with chicken, Brie, some amazing Cranberry and Chilli Sauce from @gochcompany, wrapped in foil and heated in the oven until everything is warm and the cheese has melted. Serves: make as many as you need

Ingredients

  • baguette
  • cooked chicken/turkey
  • sliced Brie or Camembert
  • stuffing, if you have any
  • cranberry sauce
  • fresh spinach
  • squirt of mayonnaise

Instructions

  1. Collect together your equipment (see Recipe Notes below) and ingredients.

  2. Preheat oven to Fan Oven 180°C/200°C/400°F/Gas 6

  3. Slice the baguette in half horizontally. I used a sourdough baguette.

  4. Slice the chicken turkey and lay on the base of the baguette.

  5. Top with sliced Brie and on the other half of the baguette, spread a thick layer of Cranberry Sauce.

  6. Place the top of the bread on the sandwich and place in the centre of a piece of foil.

  7. Wrap in the foil and cook in the centre of the preheated oven for 15 minutes until the sandwich is hot and cheese has melted.

  8. Remove from the oven and take out of the foil.

  9. Remove the top piece of bread and add some fresh spinach and a squirt of mayonnaise. Place the top back on.

  10. Eat and ENJOY!
