No Christmas Day, Christmas party, Christmas film or Christmas meal is complete without cocktail sausages - however many fancy pants nibbles and treats you make, these are always the first to disappear. Swathed in a thick layer of Hot Chilli Honey, these moreish, savoury, sweet and spicy little nuggets of joy come together incredibly quickly and will disappear even more more quickly.
Serves 2 - 4
Collect together your equipment (see Recipe Notes below) and ingredients.
Preheat oven to fan oven 180°C /200°C/400°F/Gas 6
Drizzle some Chilli Oil or olive oil on a baking tray – you will need 1 – 2 teaspoons. (If food tends to stick on your trays, use baking parchment.)
Tip on the sausages and toss in the oil making sure they are covered in a thin coat of oil.
Cook in a pre-heated oven for 10 minutes, until lightly browned.
Remove from the oven and drizzle over 2 tablespoons of Hot Chilli Honey. Toss well to make sure all the sausages are covered in the honey.
Put back in the oven for cook for a further 5 - 10 minutes or until the sausages are cooked through, caramelised and deliciously sticky. Serve with cocktail sticks.

Preparing in advance:
If you want to get these ready ahead of time, simply complete instructions 1 – 6. Cover and refrigerate until you are ready to cook them. Then, simply remove the cover and pop in a preheated oven for 10 – 12 minutes or until cooked.

Alternatively, warm 2 tablespoons runny honey with ⅛ – ¼ teaspoon chilli and a quick grind of salt and pepper. Take off the heat and stir in ¼ teaspoon apple cider vinegar. Use this to drizzle on the sausages.
