Hot Chilli Honey Cocktail Sausages

No Christmas Day, Christmas party, Christmas film or Christmas meal is complete without cocktail sausages – however many fancy pants nibbles and treats you make, these are always the first to disappear.

Swathed in a thick layer of Hot Chilli Honey, these moreish, savoury, sweet and spicy little nuggets of joy come together incredibly quickly and will disappear even more more quickly. Top tip – make double the quantity you think you will need!

How to make Hot Chilli Honey Cocktail Sausages

Collect all your ingredients together:

How to make these little nuggets of joy:

  1. Drizzle some Chilli Oil or olive oil on a baking tray – you will need 1 – 2 teaspoons. (If food tends to stick on your trays, use baking parchment.)
  2. Tip on the sausages and toss in the oil making sure they are covered in a thin coat of oil.
  3. Cook in a pre-heated oven for 15 – 20 minutes, until lightly browned.
  4. Remove from the oven and drizzle over 2 tablespoons of Hot Chilli Honey. Toss well to make sure all the sausages are covered in the honey.
  5. Put back in the oven for cook for a further 5 minutes or until the sausages are caramelised and deliciously sticky. Serve with cocktail sticks.

Ingredients

  • Chilli Oil or olive oil
  • 400g cocktail sausages
  • 2 tablespoons of Hot Chilli Honey (or see Recipe Notes, if you don’t have any)

Instructions

  1. Collect together your equipment (see Recipe Notes below) and ingredients.

  2. Preheat oven to fan oven 180°C /200°C/400°F/Gas 6

  3. Drizzle some Chilli Oil or olive oil on a baking tray – you will need 1 – 2 teaspoons. (If food tends to stick on your trays, use baking parchment.)

  4. Tip on the sausages and toss in the oil making sure they are covered in a thin coat of oil.

  5. Cook in a pre-heated oven for 10 minutes, until lightly browned.

  6. Remove from the oven and drizzle over 2 tablespoons of Hot Chilli Honey. Toss well to make sure all the sausages are covered in the honey.

  7. Put back in the oven for cook for a further 5 – 10 minutes or until the sausages are cooked through, caramelised and deliciously sticky. Serve with cocktail sticks.

Recipe Notes

Equipment:

  • measuring spoons
  • baking tray
  • cocktail sticks and serving bowl

Preparing in advance:

If you want to get these ready ahead of time, simply complete instructions 1 – 6. Cover and refrigerate until you are ready to cook them. Then, simply remove the cover and pop in a preheated oven for 10 – 12 minutes or until cooked.

Alternatively, warm 2 tablespoons runny honey with ⅛ – ¼ teaspoon chilli and a quick grind of salt and pepper. Take off the heat and stir in ¼ teaspoon apple cider vinegar. Use this to drizzle on the sausages.
