Banana Bread and Banana Muffins Buttery, light, f Banana Bread and Banana Muffins

Buttery, light, fluffy and full of banana flavour, this recipe can be used to make either banana muffins or a banana loaf. Delicious served simply with butter, or why not throw together a whipped, salted maple or honey butter? You can also introduce other ingredients and flavours to this recipe such as chopped chocolate, nuts and dried or fresh fruit, different spices, lemon, orange, almond, coffee or vanilla.

Like any banana bake, this recipe benefits from using over-ripe bananas. Not only does this avoid waste, this is when bananas are at their sweetest and perfect for baking. Over-ripe bananas can be frozen (peel, chop into 2cm pieces and defrost before using) so you can make banana loaf at any time without waiting for the bananas to become sufficiently old!

As with all my muffin recipes, they can be frozen whilst raw and then cooked directly from the freezer. Mix up a batch of muffins, cook what you need and freeze the rest for another day! Use the bananas up at the right time but have banana muffins anytime!

Prawn Cocktail If you are looking for inspiration Prawn Cocktail

If you are looking for inspiration for a quick, easy, classic starter for a special dinner to bring in the new year tonight or even New Year’s Day tomorrow, look no further. 

A Prawn Cocktail needs little introduction, particularly if, like me, you grew up in the 1970s and 80s. Ubiquitous for my generation, it was served in the poshest restaurants, was a staple of pub grub and a popular and easy starter to make at home. Nigel Slater said that the prawn cocktail “has spent most of (its life) see-sawing from the height of fashion to the laughably passé”. Well, it has never been passé in my book. Simple, quick to make and sublimely delicious.

I make mine with my favourite homemade Marie Rose Sauce recipe. However, there are a number of pretty good shop bought sauces. You can also use Thousand Island dressing. I kid you not, this is one of the simplest and tastiest starters you will find!

However you choose to celebrate tonight, I wish you fun, laughter and joy. Thank you so much for all your support, comments and feedback during the past 12 months. It just remains for me to wish you all good wishes for a happy, healthy 2023, with hopefully, lots of good food! See you next year!

Festive Rocky Road One last post before the big d Festive Rocky Road

One last post before the big day to wish you all a very Merry Christmas full of joy, love, laughter and, hopefully, lots of delicious food. If you need a super quick, luscious sweet treat for the festivities, but do not have the inclination or time to bake, this may be your ideal recipe.

Loaded with milk and dark chocolate, crunchy, crispy, almond amaretti, soft sweet marshmallow, and studded with luscious red glacé cherries and green, crispy pistachio nuts, these addictive seasonal Rocky Road Slices are a colourful treasure chest of festive flavour and texture.

You can use homemade crispy amaretto biscuits in this slice, or for ease, use shop bought. Both add a wonderfully crunchy almond flavour and texture. If you are allergic to nuts, use your favourite crunchy cookie.

Adapted from Nigella’s Christmas Rocky Road, you can play around with the ingredients to suit your taste. Change or omit the nuts, add raisins or sultanas instead of cherries, use different biscuits. Totally your choice but do remember to vary the textures, flavours and ideally, the colours too.

Frangipane Mincemeat and Apple Slice This fabulou Frangipane Mincemeat and Apple Slice

This fabulous festive slice is made up of a layer of crispy, buttery, homemade pastry, topped with spicy mincemeat, fresh grated apple and finished with a layer of moist, nutty, light frangipane. With all the flavours of Christmas, this delightful slice works as well served with a cup of tea, as it does for dessert, warmed and served with cream, ice cream or custard.

If you love mince pies and frangipane, if you don’t like fiddling around rolling out pastry and making individual pies, but you want to whip up some homemade Christmas fare, these are definitely for you! You don’t even need to roll out the pastry – you grate it! It really is the easiest pastry base to make, but it yields the most delicious, buttery, sweet, short pastry.

Thai Red Pork Curry with Pineapple and Ginger I Thai Red Pork Curry with Pineapple and Ginger 

I love all the traditional food we eat at Christmas and eating pretty much the same thing year on year is an absolute joy. After a few days, however, I am craving spicy, hot food. As such, in between the mince pies, cranberry sauce and pigs in blankets, I stock up on homemade curry pastes, so I can quickly and easily throw curries together.

This Thai Red Pork Curry with Pineapple and Ginger is made with thin slices of tender fillet of pork, cubes of sweet, fresh pineapple and a good hit of ginger. Finish with Thai sweet basil, serve over steamed Jasmine rice and top with coriander, extra pineapple and chilli slices – you will be amazed how delicious and quick and easy it is to make. If you don’t like pork, it also works wonderfully well with chicken and even better, will work a treat with leftover turkey!

Ginger and Dark Chocolate Brown Butter Cookies Th Ginger and Dark Chocolate Brown Butter Cookies

These Ginger and Dark Chocolate Brown Butter Cookies are a celebration of the timeless and classic, festive flavour combination of dark chocolate and ginger. Browning the butter, takes these cookies up a notch by deepening the flavours and adding a rich, caramelised, nutty unami to these wonderful winter treats.

They are crispy on the outside and chewy on the inside – exactly the way cookies are meant to be – but if you prefer crispy cookies, simply cook them for a little bit longer. Eat them 15 minutes after they have come out of the oven, (and cooled enough to hold their shape and not burn you!) and enjoy puddles of molten, luscious dark chocolate in each and every cookie. Let them cool completely, and enjoy delectable little nuggets of solidified chocolate throughout. Your choice. If you are like me, some straight away, and more later!

Like most cookie recipes, you can freeze uncooked cookie dough balls, ready to go in the oven. Cook them from frozen and you have fresh cookies on demand. Why not make a batch this weekend, ready to cook whenever you fancy fresh cookies over the Christmas period!

Baked Pears with Marsala Wine and Cinnamon Soft, Baked Pears with Marsala Wine and Cinnamon

Soft, melt in the mouth pears baked with cinnamon in Marsala wine and sweetened with Muscovado sugar. Serve with crème fraîche, fresh cream or vanilla ice cream and you have an outstanding winter dessert which you can put together in minutes, and cook slowly whilst you eat the rest of your meal. Perfect on any day over the holiday season, but if you are looking for something a little different for the big day, why not try this dessert for your special Christmas meal? Even better, as it cooks, the cinnamon and Marsala smell will permeate deliciously through the house.

I have been making this dessert for decades, having first found it in the blue River Cafe Cookbook. There are so many incredible recipes in this book, which I constantly return to, time and time again. If you don’t own a copy, I can’t recommend it enough.

Spicy Shepherd’s Pie The weather is bitterly co Spicy Shepherd’s Pie

The weather is bitterly cold in the UK at the moment and we are covered in a beautiful blanket of snow. At times like this, I crave classic comfort food, but I also have weak spot for something with a bit of heat. This fabulous Spicy Shepherd's Pie ticks all the boxes. Minced lamb is cooked with onions, garlic, ginger, some classic Indian spices (nothing too out of the ordinary!) some stock and, if you like, some peas. The soft and luscious lamb, coated in a silky, spicy gravy, is topped with light, fluffy, creamy, buttery, turmeric and coriander mashed potato.

This Anglo-Indian fusion delight packs a huge flavour and spicy punch, whilst also being gloriously comforting. It is a wonderful dish for preparing ahead of time, and is as delicious for a family meal as it is for entertaining.

Beef Cooked in Guinness with Black Olives and Prun Beef Cooked in Guinness with Black Olives and Prunes

Rich with Guinness and tomatoes, studded with slightly salty, piquant olives, sweetened with juicy prunes, slow-cooked red onions and red pepper, this unique Beef and Guinness Casserole has layers of intense flavour, as well as interesting texture contrasts. All these wonderful flavours and textures come together surprisingly harmoniously, creating a dish which is as wonderful for a comforting family meal, as it is for a fabulous supper with friends. We love it served with a creamy, peppery, cheesy polenta but it also works really well with mashed potatoes, or cauliflower or celeriac purée, if you are looking for a lighter alternative. 

I have been making this Josceline Dimbleby recipe for over 25 years. I can’t remember where I found it, but it has featured in my kitchen for both family meals, as well as suppers with friends, many times. It freezes well and, like many casseroles and stews, is even better if made a day or two in advance. If you have a houseful this holiday season, and are looking for some inspiration once the turkey has run out, I urge you to give this a try!

Chocolate Fudge Cake – a soft, fudgy and intense Chocolate Fudge Cake – a soft, fudgy and intense chocolate sponge filled with a luxuriously, creamy, smooth, dark chocolate fudge frosting.

If, like me, you grew up in the 1970s and 1980s, when this cake was made famous, I’m sure that just the name will evoke extremely fond and nostalgic sweet, culinary memories. This recipe celebrates this iconic cake and, if you warm it before you serve it, the dreamy frosting (a Nigella recipe) basically turns into a luscious chocolate sauce. Fabulous with some ice cream!

Chocolate Fudge Cake may be past its peak of popularity, but in my opinion, it is a timeless classic. It is also a fabulous recipe if you have a houseful during the holidays, or you are looking for a special dessert alternative for Christmas Day.

Slow Cooker Christmas Mincemeat Christmas is just Slow Cooker Christmas Mincemeat

Christmas is just not Christmas without mince pies and, generally speaking, the better the mincemeat the better the mince pies! This wonderfully easy homemade mincemeat is quick to prepare and is easily cooked in the slow cooker. Bursting with Christmas spices, oranges, lemons and all sorts of dried fruits, this wonderful mixture can be used in many different recipes, not just mince pies. For example, replace the jam with mincemeat in a Christmas Bakewell Tart, use to make a light Christmas Cake or Christmas muffins, mix with apple and make a crumble or pie. Even better, your whole house will smell deliciously of Christmas, as this fabulous mixture bubbles away!

Stir-up Sunday Stir-up Sunday, or the last Sunday Stir-up Sunday

Stir-up Sunday, or the last Sunday before the beginning of Advent, is a centuries-old tradition when you ’stir up’ your Christmas pudding. This year Stir-up Sunday fell yesterday so it was a busy day in the kitchen for me - making 3 Christmas puddings, as well as a batch of slow cooker mincemeat - ready for some delicious mince pies! (Mincemeat recipe coming tomorrow.)

I have made the same Nigel Slater Christmas Pudding recipe for over 25 years now - from the year I tried it, I have made no other. There is something exceedingly comforting about knowing exactly what to expect each and every Christmas!

Loaded with dried fruit, this delicious, moist pudding has all the flavours  we associate with Christmas; it is not a heavy pudding, but it is sticky enough to meet tradition. I love it with fresh homemade custard or white sauce. Andrew prefers it with fresh cream; it also works wonderfully with traditional brandy butter or vanilla ice cream.

Although there is a long list of ingredients, and you need to steep the fruit overnight, these puddings come together very quickly. I like to cook them in a slow cooker, but they can also be steamed on the hob or in a steam oven. 

You may have missed stir up Sunday, but there is still time to make this delicious pudding. It does benefit from being made a few weeks in advance for the flavours to develop, so why not put it on your ‘to-do’ list for next weekend?

Chicken Dhansak Although classically made with mu Chicken Dhansak

Although classically made with mutton or goat, Dhansak curries are regularly served with chicken in many curry houses. Together with a delicious mix of spices, lentils and tomatoes, this is my go-to favourite meal when eating in an Indian restaurant, or ordering a takeaway. Wonderful served with rice and/or naan, a simple salad of lettuce, tomatoes and onion works really well on the side.

Please don’t be put off by the long list of ingredients – a lot of them are spices, and if you make Indian food regularly, you will probably have most of them in your cupboard anyway. Fortunately, it comes together very quickly, and although it needs to cook for 45 – 60 minutes, this is mostly hands off time – all you really need to do is give it the odd stir from time to time. Perfect for a Friday night fakeaway!

Chocolate Brownies - cooked from frozen! This is Chocolate Brownies - cooked from frozen!

This is not a post about a new chocolate brownie recipe, but a post about a new idea (to me at least) about cooking the normal, fabulous Daffodil Brownie batter, directly from the freezer, whilst still frozen.

What better than being able to present your guests with freshly baked brownies in less than 40 minutes, with absolutely no faff? 

It occurred to me that freezing cookie dough balls and cooking them from frozen is very common and very successful. I also freeze uncooked muffins and cook these from frozen. So, why not freeze uncooked brownie batter and cook a tray of brownies, from frozen? Happily, it works wonderfully; rich, fudgy brownies every single time! You even still get the lovely brownie crinkly top. Simply allow an extra 10 minutes in the oven, and you are good to go.

So next time you make a batch of Daffodil Brownies, why not double the quantity, cook half and freeze half to cook on a later occasion?

Apple, Pecan and Sultana Loaf – Gluten Free, Dai Apple, Pecan and Sultana Loaf – Gluten Free, Dairy Free and Low Sugar

Loaded with fresh, grated apple, juicy sweet sultanas, roast pecan nuts and desiccated coconut, this fabulous, moist, healthy, gluten and dairy free loaf cake is lightly sweetened with maple syrup, and warming, sweet cinnamon.

Ideal for breakfast, morning coffee, afternoon tea and perfect to include in a lunch box or for a picnic, this cake is wonderful served as is, but also delicious spread with your favourite butter – be it cow’s butter, goat’s butter or your favourite nut butter.

If you don't eat eggs, you can easily replace them with flax eggs and you have a wonderful vegan cake, which is also gluten free, with no processed sugar. The final photograph is actually the vegan version of this cake.

Whilst this Caramelised Red Onion and Goat’s Che Whilst this Caramelised Red Onion and Goat’s Cheese Galette with Fresh Figs and Basil may look like you have spent the morning in the kitchen, it is actually ridiculously easy to make. Dreamy, creamy, goat’s cheese, soft caramelised onions with a touch of garlic and a splash of balsamic vinegar, topped with sweet, fresh roast figs, all wrapped in light, crispy, pastry with sesame seeds. 15 minutes to make, 35 minutes in the oven and you are good to go. 

Wonderful on its own or serve with a green salad and fresh or garlic bread on the side. So good. Should there be any leftovers, it stores well and makes a fabulous packed lunch the following day.

Roast Spinach Gnocchi and Butternut Squash with Sa Roast Spinach Gnocchi and Butternut Squash with Sage and a Roast Garlic and Chilli Brown Butter

Caramelised, roast, sweet butternut squash, soft, puffy spinach gnocchi and crispy sage leaves drizzled with a roast garlic, chilli brown butter and served with salty parmesan and zingy, zesty lemon.

Leftover pumpkin after Halloween? Why not try this quick and easy vegetarian sheet pan meal, full of flavour, texture and vegetarian goodness? I made it with butternut squash but it could very easily be swapped with pumpkin, or sweet potatoes for that matter. Serve for lunch or supper. Delicious with some fresh bread to mop up the garlic brown butter, and a salad on the side.

French Lemon Yoghurt Cake Oozing with lemon flavo French Lemon Yoghurt Cake

Oozing with lemon flavour, this French Lemon Yoghurt Cake has a meltingly soft, light, moist crumb which is then brushed with a simple, yet luscious, lemon syrup. This classic French recipe is perfectly balanced: neither too sweet, nor too tart, with a fabulous consistent texture throughout and just the right amount of lemon.

Baking at home is not as popular as you might imagine in French households – perhaps because of the abundance of wonderful bakeries and pastry shops in virtually every village and on so many street corners in the cities. This particular cake, however, is quintessentially French – in texture, flavour and simplicity. It is the home made cake that French children grow up both eating and baking themselves, often learning how to make it at school.

Traditionally, rather than weighing the ingredients, a yoghurt pot is used to measure the ingredients by volume. This adds to its appeal and simplicity, particularly when making with children – 1 pot of yoghurt, 1 pot of oil, 2 pots of sugar, 3 pots of flour, 3 eggs, some baking powder, a touch of salt and voila!

Roast Gnocchi and Mushrooms with Wilted Spinach an Roast Gnocchi and Mushrooms with Wilted Spinach and Roast Garlic Parsley Butter

Lightly caramelised, tender pillows of gnocchi, roasted mushrooms and soft, wilted spinach, coated with a delicious parsley and roast garlic butter. So simple, quick and easy to make, yet full of flavour and texture. You can have this meal on the table in less than 40 minutes, and 30 of those are hands off whilst the gnocchi cooks. 

Roasting gnocchi, rather than boiling them, is a fantastic new discovery for me. I just love it!
