Sea Bass Salmoriglio with Tomato and Black Olive S Sea Bass Salmoriglio with Tomato and Black Olive Salsa

Salmoriglio is a fabulous Sicilian marinade and dressing typically made from olive oil, warm water, lemon juice, oregano and garlic. There are many variations on this theme, and parsley and mint can be used, as well as, or instead of, the oregano. Equally, white wine has replaced lemon juice in some areas. Salmoriglio works well with meat, fish and vegetables, but I particularly love it with fish.

I am calling this Sea Bass Salmoriglio but, it truth, I have taken a few liberties. It turns out that neither my fridge nor local shop had any parsley or oregano. So I had to improvise and make substitutes. The fresh herbs I used included mint, dill, basil and celery fronds, and I added some dried oregano and a hint of chilli, as well. Served with a fresh tomato and black olive salsa and some new potatoes, this may not be your traditional Salmoriglio, but I promise you, whatever you call it, it is so delicious.

Mango and Avocado Salsa with Coriander, Mint and L Mango and Avocado Salsa with Coriander, Mint and Lime

Incredibly quick to come together and bursting with the flavours of summer, this fresh, zesty salsa is a wonderful accompaniment to barbecues, buffets, picnics, grilled meats and fish, in tacos – you name it, it works every single time.

Dressed only in lime juice, allowing all the ingredients to shine, you can have this on the table in 5 minutes. The only challenge is making sure that both your avocado and mango are at the perfect level of ripeness at the same time!

Like a lot of chopped salads, this is a pretty forgiving recipe. I make mine with roughly equal quantities of mango and avocado, but you can play around with this to suit your palate. We love ours with a cheeky, finely chopped red chilli mixed in, but this is up to you. Equally, if you don’t like coriander, miss it out. Fresh basil would be a lovely addition instead, or simply let the mint sing!

Chalet la Maya, Les Collons, Switzerland No trip Chalet la Maya, Les Collons, Switzerland

No trip to our chalet is complete without a visit to this wonderful restaurant, @chalet_la_maya . With incredible views over the Val D’Herens, dominated by Dent Blanche and the Matterhorn in the distance, this restaurant produces seasonal Swiss cuisine using the best local produce from the Valais/Wallis region of Switzerland.

Charlotte and I both chose the salmon, which was served with rice, a selection of seasonal vegetables and a fabulous shellfish sauce. We then enjoyed their apricot dessert, which was outstanding, bursting with apricot flavour but with a variety of different textures.

The Valais produces around 97% of Swiss apricots. Over 70 varieties are grown, and they even hold festivals to celebrate the fruit. The season runs from the end of June to mid September, and apricots can literally be found everywhere, from markets, supermarkets, stalls on the side of the road and directly from farms. This wonderful fruit can be served as is, cooked, with sweet and/or savoury food and is also used to make apricot eau-de-vie.

Restaurant Les Chottes, Veysonnaz Lovely walk to Restaurant Les Chottes, Veysonnaz

Lovely walk to Les Chottes with Mr Daffodil and Arty, the dog. 

This wonderful restaurant is nestled into the Swiss Alps between Veysonnaz and Siviez. Serving classic mountain and Swiss fare in a bustling, friendly environment, it is one of my favourite places for lunch, or even just a quick drink, when we are in the mountains. We love this place both in the winter, when we ski here, and in the summer, when we come by foot. 

The walk is stunning - even the dog stopped to admire the view!

Just a quick lunch today. I had some Croquettes de sérac et confiture d’abricot and then some chocolate ice cream - it's hot here, any excuse!

 Sérac is a delicious, soft Swiss cheese, similar to ricotta, but made with fresh cow's milk, as opposed to sheep’s milk.

If you are in the area, do try and come here!

Breakfast with a View! This is one of our favouri Breakfast with a View!

This is one of our favourite breakfasts when we are on holiday - German Pancake. This delicious family size pancake can be served with a variety of different accompaniments - try lemon and sugar, maple syrup, fresh or cooked fruit, yoghurt, bacon, sausages, mascarpone cheese, Nutella, whatever you fancy and is deliciously quick. It also makes a wonderful dessert. 

This style of pancake became popular in the US, initially in the American-German community, at the turn of the 20th century. Other names for this pancake include Dutch Baby, Dutch Puff, Hootenanny and the Bismarck. 

Whatever you want to call it, I love this recipe for its ease and simplicity and is certainly easier than standing over the hob cooking a pile of individual pancakes. 

The German Pancake needs to be served IMMEDIATELY – as soon as it comes out of the oven, it will start to deflate, so make sure all your additional ingredients are prepared and everybody is sat at the table ready to eat it pronto!

The Cube - Varone Our Swiss wine odyssey continue The Cube - Varone

Our Swiss wine odyssey continued yesterday with lunch at The Cube.

Located in the heart of the Varone vineyards with incredible views over Sion and the Rhone Valley, we enjoyed some delicious food, fabulous wine, and of course, one of the best views in the area. The walk to the Cube, winding through the Varone vineyards and along the Bisse de Clavau, took us around 45 minutes from @lescelliersdesion. It was a hot day so we really felt we had earned our lunch! Arty, the dog, also loved the walk - nearly as much as the fresh bowl of water the chef gave her immediately on arrival!

A previous winner of the Swiss Heritage Prize, all the tables at the Cube are outdoors (so may be cancelled in inclement weather) and the food is grilled in front of you. We chose - 

- beef entrecote with truffle butter, served with grilled potatoes and salad
- trout fillet with grilled potatoes and salad
- the dessert of the day which was a chocolate Bavarois
- lemon sorbet drizzled with grape must

Grape must is juice obtained from freshly pressed grapes, before it is converted into wine. Colloquially known as just ‘must’, the word comes from the Latin term ‘vinum mustum’ which translates as 'young wine’. I had never tried it before and I can confirm it worked wonderfully with the sorbet. Apparently people mix it with snow to make must slushies! Would love to try that!!

We washed down our lunch with a bottle of Petite Arvine AOC and Andrew had a glass of Stricto Senso Pinot Noir AOC with his steak. All the dishes come with recommended wines and you can stop by, purely for wine tasting as well.

Château de Villa, Sierre, Valais, Switzerland Af Château de Villa, Sierre, Valais, Switzerland

After our trip to Salgesch, we jumped in the car to visit this wonderful Château in Sierre. Serving a range of Valaisanne food, but famed for serving 5 different types of Raclette, this beautiful building has numerous dining rooms, as well as a fabulous terrace. 

Importantly for our Swiss wine research, they also have an incredible wine bar and shop showcasing a huge array of wine talent from the area; small and new producers, cooperatives, as well as the largest and most famous, are all represented. 

We enjoyed a delicious Assiette Valaisanne (a plate of local dried meats and cheese) served with delicious local bread. The apricot and the nut seigle were particularly moreish. To wash this down we enjoyed some Grand Cru du Valais Petite Arvine and a Fernand Cina Pinot Noir.

After a trip into the shop and quick chat, we also came home with 18 bottles of wine. Knowledgable and friendly, we took their advice and bought a range of wines from various producers. I can’t wait to try them! 

This was our first visit to @chateaudevilla, and although they have an online shop, we will definitely be back. Not only is it a fabulous place to visit, I’m desperate to try the Raclette!

Das Weindorf der Schweiz/The Wine Village of Switz Das Weindorf der Schweiz/The Wine Village of Switzerland, Salgesch, Valais/Wallis, Switzerland

Yesterday, our Swiss wine research, took us to Salgesch. Famed for their wine, this small town in the German speaking district of Leuk, in the canton of Valais/Wallis, has fewer than 2000 inhabitants, yet it is home to over 40 wineries, covering a total of around 500 acres of land.

Quintessentially Swiss in appearance, there is no doubting which industry dominates this friendly place - there are vineyards as far as the eye can see nestled into the majesty of the Swiss Alps in the Rhone Valley and opportunities to taste and buy wines on every corner. 

If you are visiting Switzerland, Salgesch is a ‘must visit’ on every wine lovers tour.

Grand Hôtel & Kurhaus, Arolla, Valais If you wan Grand Hôtel & Kurhaus, Arolla, Valais

If you want wonderful food, delicious wine and the most incredible view, it would be very difficult to beat a visit to this amazing place in Arolla.

With stunning views over the Evolène Valley in the Valais, we sat on the terrace outside the front of the @grandhotelkurhausarolla , and enjoyed a fabulous lunch:

- Crêpe parmentière with trout graved-lax, fresh dill and sour cream
- Roast cod, shellfish butter, with new potatoes, lemon and crunchy vegetables
- Wild rice with sautéed vegetables, parsley, pumpkin seeds, pistachio, baked aubergine and oriental onion salad
- Salade Italienne with arancini, mozzarella, olives and a truffle vinaigrette
- Deconstructed lemon tart
- Gourmandise chocolat with green chartreuse

The provenance of the food is very important at the Kurhaus; they serve excellent Valaisanne fare using local and seasonal produce, as well as offering a range of fusion dishes. 

We visit here often and are continually blown away by the views, from the hotel, and the surrounding mountains, where we both walk and ski. The photographs do neither the view nor the food any justice. It has to be seen to be believed. 

If you are in the Valais area, the Grand Hôtel & Kurhaus is a 'must visit’! But don’t forget to book, it can get very busy in high season.

La Luge, Les Collons - our favourite pizzeria in t La Luge, Les Collons - our favourite pizzeria in the Alps!

And we are back, again!

No trip to this wonderful area of the Swiss Alps is complete for us, without a trip to this incredibly friendly and lively restaurant, @pizzerialaluge. We’ve been coming here for over 15 years, and we love it as much in the summer, as we do in the winter.

La Luge has been run by 3 generations of the Coretti family since 1974. They offer an amazing collection of fresh pizzas, all made to order in front of you, as well as a range of both Italian and local Swiss dishes.

Last night Emma and I shared a fabulous Pizza Napolitaine with anchovies and capers, as well as a mixed salad with beetroot and sweetcorn. Utterly gorgeous! As you can see, Arty (the dog) definitely wanted in on the action!

If you are in the Thyon-Les Collons/Veysonnaz area, @pizzerialaluge is a 'must visit' for all pizza fans! But don’t forget to book - it gets very busy.

Les Celliers de Sion, Valais, Switzerland When yo Les Celliers de Sion, Valais, Switzerland

When your 22 year old daughter announces she wants more driving practice in the mountains on the other side of the road, what do you do? Ask her to be a chauffeur and go wine tasting, of course!

Swiss wine is difficult to find outside of Switzerland but is sold in abundance here. Nearly 150 million bottles of wine are produced annually, only 1% of which is exported.  There are 6 wine regions and the Valais, where we go, is the largest regional producer, providing around 33% of the total production. 

Over 252 grape varieties are cultivated creating unique wines, quite different from much of Europe. Although we have been drinking Swiss wine now for around 15 years, we recently decided that we really need to improve our knowledge and this was the ideal opportunity.

We headed down the mountain to Les Celliers de Sion. Set up by the Bonvin House and the Varone House, this spectacular, energy self sufficient building is the first Oneoparc in Switzerland. Located in the heart of the local vineyards, they are open 7 days a week. 

You can pop in for informal tastings or arrange a more organised event. We tried around 12 different wines between us and left with more than a dozen bottles. A thoroughly enjoyable evening and a great learning experience. If you are interested in wine, specifically Swiss wine, I really recommend a visit.

Gazpacho with Fresh Parsley Oil Laden with the sw Gazpacho with Fresh Parsley Oil

Laden with the sweet, fresh vegetables of the Mediterranean, gazpacho is a super tasty, incredibly healthy soup or drink, with a slight spicy kick. It is served very cold and is perfect on these hot summer days.

A classic Spanish dish, there are many, many variations; this is the basic recipe I work from. It is very simple, very fresh, nothing complicated, with no additional spices, herbs or tomato paste. I really want the vegetables to shine. It is also a very forgiving recipe, so feel free to adjust the ingredients to suit your tastes.

The key to a great gazpacho is the freshness and sweetness of the vegetables you use – use the best, freshest vegetables you can buy and make sure they are perfectly ripe.

Gazpacho can be served as a soup or a drink. This recipe is quite thick which is the perfect consistency to eat from a bowl with a spoon. If you prefer to serve it as a drink, simply thin with some fridge cold water until you reach the consistency you are looking for, or you can serve it over ice.

Magic Shell Ice Cream Topping Magic Shell Ice Cre Magic Shell Ice Cream Topping

Magic Shell Ice Cream Topping is a delicious, soft, runny, chocolate topping which sets into a crunchy shell, as soon as it hits the freezing cold ice cream. It creates a delicious, set, chocolate topping with a wonderful texture contrast; shake over some colourful sprinkles or chopped nuts and/or grated chocolate and you are good to go! It is really easy to make, uses only 2 ingredients, and you can use your favourite chocolate. It works well with white, milk and dark chocolate.

Apparently today is London’s hottest day ever! It certainly feels that way. I don’t think anybody is really going to want to do much cooking but ice cream, on the other hand, is perfect in this weather. Charlotte went to pick up some for us yesterday, and funnily enough, the shops were pretty much sold out and she only found some less than premium vanilla ice cream. So, waste not want not, and desperate to cool down, I decided to zhuzh it up with this absolutely fabulous magic topping.

What a fabulous evening Andrew and I had night with these two beauties, at this wonderful restaurant and bar situated right on the beach front, in St Martin de Ré.

With an exotic and cosy interior, this unique, busy, friendly, bar and restaurant serves wonderful food, in the most delightful setting. We hadn’t been here before but I can guarantee that we will be back!

We enjoyed:

- Burger and fries
- Sea bass with sweet potato and coconut
- Seared tuna with Asian salad
- Strawberry gazpacho and meringue

Open every day from 8.30am to 1.45am, La Cible will appeal to all generations. It can get very busy though, so make sure you book. All bookings are made by sms on +33768753473. Despite clear instructions and making a booking, we managed to turn up 2 days early!! My fault entirely; thank you so much to @restaurant_la_cible for squeezing us in! 💛🌼
La Martinière, Artisan Ice Cream on the Île de R La Martinière, Artisan Ice Cream on the Île de Ré

No trip to Île de Ré is complete without regular trips for ice cream from @la_martiniere_glacier . With shops in 5 different locations around the island, as well as an on-line option, this exceptionally delicious, artisan ice cream is fabulous at any time of the year, but is a particularly perfect treat in this scorching heat!

Set up in 1970, La Martinière is a family run business which makes all the ice cream on the island, plus, they only sell it on the island. If you can’t get it anywhere else, it seems rude not to make the most of it whilst we are here! 

There is no shortage of choice either, with nearly 50 different flavours of ice cream and sorbet to choose from, as well as a fabulous range of frozen macarons and other cakes and pastries. 

If you are lucky enough to visit this wonderful island, you really must not leave without trying this incredible ice cream. 💛🌼
L’Avant Port, Saint Martin de Ré, Île de Ré L’Avant Port, Saint Martin de Ré, Île de Ré

Andrew and I enjoyed an outstanding meal at L’Avant Port, in Saint Martin de Ré last night. This chic bistro is located at the opening of the port and enjoys views over this bustling and beautiful little town. The food is inspired by the location of this restaurant as well as the season. Clearly, the provenance of the food is hugely important, with the fish going directly from ‘boat to plate!’ 

They offer an a la carte menu, as well as a set menu, which at €49 for 3 courses, is exceptionally good value. 

We enjoyed:
- Piperade au vieux balsamique, thon rôti au tandoori

- Soupe froide de crustacés et coquillages au pineau

- Cabillaud et légumes croquants au sésame, menthe fraîche

- Parfait glacé au citron vert

The fresh produce on this island is incredible - the fish is outstanding, the fruit sweet, juicy and delicious, the pastries and cakes are mouth-watering and a fabulous choice of local cheese. We start the day with a cycle, before it gets too hot, then a trip to the market, followed by a relax on the beach and then supper in one of the many wonderful restaurants. A fantastic, simple life for a week. 💛🌼
Le Bistrot du Marin, Saint Martin, Île de Ré Fa Le Bistrot du Marin, Saint Martin, Île de Ré

Fabulous meal last night, with my favourite people, in my favourite place in France!

Le Bistrot du Marin, overlooks the harbour in Saint Martin on the wonderful Île de Ré, a small island off the west coast of France. They serve delicious fresh fish, shellfish and incredible steaks in a wonderfully relaxed and friendly setting. You can’t book, so get there early or be prepared to wait - it's worth it! They stay open very late and the atmosphere becomes decidedly jollier as the evening progresses!

We enjoyed:
- crevettes mayonnaise
- côte de boeuf with frites and salad
- filet de lingue, ratatouille
- sole entière
- fondant chocolat, crème anglaise
- baba au rhum

We come here each time we visit the island, but to be honest, there are so many fabulous places to eat, we generally only make it here once. But each time we LOVE it!

I can’t wait for the rest of the week. 💛🌼
Strawberry Ripple Ice Cream - No Churn Bursting w Strawberry Ripple Ice Cream - No Churn

Bursting with the sweet flavour of fresh strawberries and cream, this ice cream is the All England Wimbledon Tennis Championships in a cone or a bowl. Strawberries and cream are synonymous with Wimbledon and this is a great way to enjoy them, prepared in advance and ready to eat at the drop of a hat. Enjoy it for dessert or a treat in the sunshine, either on its own or as part of a dessert, I guarantee you will love it!

To concentrate and deepen the flavour of the strawberries, they are first roasted, with a little bit of sugar, before being pureed. ⅔ are then whisked together with the condensed milk and double cream. Then the remaining strawberry puree is swirled through to create delicious hits of strawberry as you eat.
