‘Wimbledon Royals’ Sausage and Egg English Muffin with Cheese

Starting Wimbledon tennis fortnight with a hearty breakfast made using ‘Wimbledon Royals’ sausages from our local butcher here in Wimbledon, fried egg, cheese and English muffins. Deliciously filling, quick and easy to make, this is the perfect breakfast to set you up for a day of tennis, whether you are in the stands, sat on Henman Hill or, more likely this year, sat at home on the sofa watching a few matches!

Of course, you don’t need to use Wimbledon Royals – just use your favourite sausage. Making them into patties makes them quicker to cook, they have a delicious, lightly caramelised crust and they are certainly easier to eat than a chopped sausage in the muffin!

This is rather like a McDonald’s Sausage and Egg McMuffin. Bizarrely, I used to crave these when I was pregnant with Charlotte. I used get up early, to make sure I had time to have one everyday before work! I hadn’t had one before and I haven’t had one in the 23 years since! I have, however, eaten quite a lot of these wonderfully delicious home-made versions!

How to make ‘Wimbledon Royals’ Sausage and Egg English Muffin with Cheese

Collect all your ingredients toegtehr:

  • sausagemeat. Use your favourite. I used ‘Wimbledon Royals’ from our local butcher
  • cheese, your choice. I like cheddar, Gruyère or Emmental
  • eggs
  • English muffins
  • butter
  • condiments such as HP sauce, ketchup, mayonnaise

Now make this delicious breakfast:

  1. Make your sausage patties: remove the skin from the sausages, if necessary, and shape into pattie shapes. I use a pastry cutter the same size as the muffins. Simply press the sausagemeat evenly into the cutter.
  2. Cook: barbecue, grill or fry the patties until cooked.
  3. Add cheese: when you turn the patties over, top the cooked side with your cheese of choice. It will soften and melt a little whilst the sausage continues to cook.
  4. Cook the egg: just before you are ready to serve the muffin, heat a little oil or butter in a frying and fry the egg(s) until cooked to your liking.
  5. Toast the muffin: at the same time, lightly toast the muffin and spread with a little butter.
  6. Assemble:
    1. toasted and buttered muffin base
    2. sausage pattie and cheese
    3. fried egg
    4. season egg with a sprinkling of salt and freshly ground black pepper
    5. toasted and buttered muffin top
  7. Serve: serve hot with condiments of choice, such as HP sauce, ketchup and/or mayonnaise

Ingredients

  • 125g sausagemeat. Use your favourite. I used ‘Wimbledon Royals’ from our local butcher
  • 25g – 35g slice of cheese. I like cheddar, Gruyère or Emmental
  • 1 x large or medium egg
  • 1 x English muffin
  • butter to spread onto muffin and cook egg
  • salt and freshly ground black pepper

To serve:

  • condiments such as HP sauce, ketchup, mayonnaise
