Baked Spicy 4 Cheese Dip with Tomatoes, Avocados and Soured Cream

A spicy, hot dip made using 4 different types of cheese, loaded with jalapeño peppers and smoked chilli paste, topped with fresh tomatoes, avocados and sour cream and served with crispy tortilla, bread or crackers.

This fabulous dip comes together very quickly, can be made in advance, (up to the point of baking) and you can easily remove, increase or decrease the spice level to suit your palate.

A perfect treat to nibble with a glass of wine, or why not whip one up to have with some beer whilst watching tonight’s football? There is also the tennis to think about over the next few days or even the forthcoming rugby, fingers crossed!

We are having a typical British summer at the moment – somewhat wet and chillier than we would wish – what better than a hot cheesy dip smothered in fresh salad vegetables and some sour cream to warm us up, delight our tastebuds and help us cheer on our favourite team?

How to make Baked Spicy 4 Cheese Dip with Tomatoes, Avocados and Soured Cream

Collect all your ingredients together:

For the cheese layer –

  • full fat cream cheese
  • soured cream
  • grated cheddar cheese, I like mature cheddar
  • grated mozzarella
  • finely grated parmesan cheese
  • chopped jalapeño – fresh or bottled
  • Mexican smoked chilli paste (optional)
  • freshly ground black pepper
  • salt to taste – I don’t normally need to add extra salt

For the crispy topping –

  • unsalted butter
  • breadcrumbs – I use panko
  • finely grated parmesan cheese
  • freshly ground black pepper
  • pinch of fine salt, optional

Suggestions to add after cooking –

  • chopped tomatoes
  • chopped avocados
  • chopped spring onions
  • sweetcorn kernels
  • chopped peppers/capsicum
  • black beans
  • soured cream
  • chopped coriander

Serving suggestions –

  • crispy tortillas
  • Doritos
  • bread
  • crackers

How to make this super delicious dip:

First make the cheesy layer –

  1. Grate the cheddar, mozzarella, (if necessary) and parmesan cheese and add to a mixing bowl with the cream cheese, sour cream, some chopped jalapeños and seasoning. Mix well and add chilli paste to taste.
  2. Taste and adjust seasoning and add more spice if necessary.
  3. Transfer to a shallow bowl and level the surface of the spread.

Now make the crispy topping –

  1. Melt the butter in a saucepan over a moderate heat and stir in the breadcrumbs, grated parmesan and the seasoning.
  2. Scatter evenly over the top of the dip and bake in the centre of a preheated oven for 30 minutes. It is baked when the surface is golden brown and crispy and the dip is hot and bubbling.

Add after cooking –

  1. Prepare your chosen toppings – I used chopped tomatoes, avocado, spring onions and sour cream.
  2. When you remove the dip from the oven, scatter over your chosen toppings and drizzle with sour cream. Eat with some crispy tortillas or Dorito chips, relax and enjoy!

Ingredients

For the cheese layer –

  • 125g full fat cream cheese
  • 125g soured cream
  • 75g grated cheddar cheese, I like mature cheddar
  • 50g grated mozzarella cheese
  • 35g grated parmesan cheese
  • 10g – 35g chopped jalapeño – fresh or bottled – I use 25g
  • 1 – 3 teaspoons Mexican smoked chilli paste – I use 2 teaspoons
  • ¼ teaspoon freshly ground black pepper
  • salt to taste – I don’t normally need to add extra salt

For the crispy topping –

  • 20g unsalted butter
  • 20g breadcrumbs – I use panko
  • 20g finely grated parmesan cheese
  • ⅛ teaspoon freshly ground black pepper
  • pinch of fine salt, optional

Suggestions to add after cooking –

  • chopped tomatoes
  • chopped avocados
  • chopped spring onions
  • sweetcorn kernels
  • chopped peppers/capsicum
  • black beans
  • soured cream
  • chopped coriander

Serving options –

  • crispy tortillas
  • Doritos
  • bread
  • crackers

Instructions

  1. Collect together your equipment (see Recipe Notes below) and ingredients.

  2. Preheat oven to Fan Oven 180°C/200°C/400°F/Gas 6.

  3. First make the cheesy layer – grate the cheddar, mozzarella, (if necessary) and parmesan cheese and add to a mixing bowl with the cream cheese, sour cream, some chopped jalapeños and seasoning. Mix well and add chilli paste to taste.

  4. Taste and adjust seasoning and add more spice, if necessary.

  5. Transfer to a shallow bowl and level the surface of the spread.

  6. Now make the crispy topping – melt the butter in a saucepan over a moderate heat and stir in the breadcrumbs, grated parmesan and the seasoning.
