Hug in a Mug – Core Recipe

Single serving light and fluffy sponge, mixed in a minute and cooked in 2 minutes. I kid you not!! Serve with cream, ice cream or as is.

Sometimes you just want cake and you need it now! I’ve tried many mug cakes and and I generally have 2 issues with them – they can be too rubbery in texture and they tend to be way too big . This is around the size of a medium cupcake and is very light and fluffy. Microwaving, as opposed to baking, does alter the texture of the cake and it is always best eaten very fresh but this really is the best I have come across. I have made it in a variety of flavours and it is definitely my go to “Hug in a Mug’!

How to make Hug in a Mug

Collect all your ingredients together:

  • plain/all-purpose flour
  • sugar – caster, granulated or brown sugar
  • baking powder
  • fine salt
  • milk
  • sunflower or vegetable oil
  • any relevant additional ingredients

Whip up that cake:

  1. Measure the dry ingredients – the flour, sugar, baking powder and salt – directly into a microwave safe mug.
  2. Stir to mix well.
  3. Add the oil and milk and stir to mix.
  4. Cook in the microwave on high for 1 minute. Leave to sit for a further minute before eating.
  5. To serve: sprinkle with icing sugar and eat either as is or with cream or ice cream
  6. NB Please note that the power in microwaves varies. You may find that you need to alter timings to suit your oven. When you have figured out the right length of time, make a note of it!

Ingredients

Dry ingredients:

  • 1½ tablespoons plain/all-purpose flour
  • ½ tablespoon sugar – caster, granulated or brown sugar
  • ⅛ teaspoon baking powder
  • pinch of salt

Wet ingredients:

  • 1 tablespoon and 1 teaspoon milk
  • 1½ teaspoons sunflower or vegetable oil

Additional ingredients ideas:

  • 1 teaspoon of Nutella
  • 1 teaspoon nut butter, eg peanut, almond, pistachio, hazelnut
  • 1 x Rolo
  • 1 teaspoon jam
  • 1 teaspoon lemon curd
  • 1 teaspoon golden syrup
  • 2 – 3 teaspoons of smarties,
  • 2 – 3 teaspoons chopped nuts    
  • 2 – 3 teaspoons dried fruit    
  • 2 – 3 teaspoons marzipan chopped into small cubes
  • 3 – 4 fresh or frozen raspberries   
  • 3 – 4 fresh or frozen blueberries  
  • ½ teaspoon poppy seeds 
  • ½ teaspoon grated lemon rind

Instructions

  3. Stir in any additional ingredients
