Wimbledon Tennis Championships After 3 long years Wimbledon Tennis Championships

After 3 long years, the Wimbledon Tennis Championships are, once again, back to normal and in full swing. The sun is shining and SW19 is buzzing. As a local resident, this is my favourite time of year. And with 9 Brits through to the second round, this is our best performance since 1997. It promises to be a fabulous tournament!

My daughter Charlotte, who normally works as a physiotherapist in the NHS, is currently part of the medical team at the Championships. They all work exceptionally hard and the days are long, so Charlotte put in a request for some Daffodil Brownies and Carrot Cake Slice. Supporting the medical team, support the players! 

After a fabulous day on Centre Court yesterday, I am watching the tennis on the television today. Looking forward to Andy Murray and Emma Raducanu playing soon. With a fair wind and a loud cheer, we can hear the crowds from our house. I can’t wait!

Roast Sweet Potato, Fresh Cherry and Goat’s Chee Roast Sweet Potato, Fresh Cherry and Goat’s Cheese Salad with Cranberries, Pecan Nuts and Pickled Red Onion may be a bit of a mouthful, but I promise, you will LOVE this salad! Just think –

- luscious, soft sweet potato, roasted to bring out the flavour and add a touch of caramelisation,
- beautiful, fresh, sweet, in-season cherries,
- fresh, peppery, rocket,
- dreamy, creamy Goat’s cheese,
- a tangy lick from the pickled red onion to cut through the sweetness,
- crunchy nutty pecans bring texture, flavour and nutrients,
- and, slightly tart and sweet dried cranberries,
- all drizzled with a sweet and spicy Honey and Mustard Dressing with Lemon, Chilli and Garlic.

Whenever I make a new salad, Charlotte graciously tells me that it is her favourite! But this one blew her away; between us we did not leave a scrap! If you don’t eat it all in one sitting, it keeps very well in the fridge overnight and makes a wonderful lunch the next day. It may keep longer, but to be honest, ours has never lasted that long!

Ice Cream from Caffi Patio, Llangrannog The last Ice Cream from Caffi Patio, Llangrannog

The last few photographs from a mini break in West Wales with my mum. We made a quick detour on the way back home, with a stop to our favourite spot. We absolutely fell in love with Llangrannog whilst we were here and couldn’t leave until we had tried some of the home-made ice cream from Caffi Patio. Mum chose scoops of mango and salted caramel and I had amaretti and also chocolate. Absolutely outstanding!

This family run ice cream parlour is located directly on the beach and also sells a delicious range of home made cakes, savoury snacks, breakfast rolls and milkshakes, as well as take-home ice cream boxes, if you are staying locally. You absolutely MUST come here if you are any where near this beautiful part of the world.

The Ferry Inn, St Dogmaels, Pembrokeshire A few p The Ferry Inn, St Dogmaels, Pembrokeshire

A few photographs from our lovely meal last night @ferryinnriverside gastro pub in St Dogmaels in Pembrokeshire. With beautiful views over the River Teifi, we enjoyed fabulous service, and delicious food in a very friendly and relaxed atmosphere. Frequented by tourists and locals alike, both mum and I, and our dogs, received an incredibly warm welcome. Do pop in if you are in the area. Don’t forget to book though, they were very busy when we were there. 

We enjoyed:
- The Ferry Burger made with Welsh beef, Welsh cheddar, crispy bacon, gherkins, lettuce, tomatoes, aioli, rocket, coleslaw and home-made chips
- Chicken and Chorizo Tagliatelle with cajun spice, garlic, cream, white wine and parmesan cheese.
- New York Cheesecake with Fruit Coulis and Ice Cream.
- Dark Cherry and Marzipan Bake with Vanilla Ice Cream.

It's hard to pick favourites when everything is so delicious, but the Welsh beef burger was really very tasty and the Marzipan Bake was absolutely outstanding!

Pentre Arms, Llangrannog, Ceredigion Back in Llan Pentre Arms, Llangrannog, Ceredigion

Back in Llangrannog last night for another wonderful evening in this magical corner of Wales. A delicious supper at the award winning @pentrearms of pan-fried hake, grilled sea bass, blackberry and apple crumble and steamed syrup sponge with lashings of custard. 

Set in a stunning picturesque location, this welcoming, friendly pub is full of locals and tourists and has a glorious view over Llangrannog beach. A quick dog walk to take in an incredible sunset was to follow. What a fabulous way to end the day!

Do make the effort to come here - I guarantee you will love it.

King Prawn Chow Mein If you are looking for some King Prawn Chow Mein

If you are looking for some supper inspiration, look no further! 

King Prawn Chow Mein is a delicious, authentic Chinese stir fry, quick and easy to make and far better than any take-away! It is loaded with king prawns, crispy vegetables and noodles, swathed in a luscious, dark sauce made from staple, supermarket ingredients including oyster sauce, soy sauce, sesame and Shao Xing wine. We really, really love this dish – so simple, yet bursting with flavour and texture.

Don’t like prawns? Then, swap in some diced chicken or beef or simply increase the amount of vegetables and you have a fabulous vegetarian dish.

This recipe is very, very slightly adapted from the wonderful @khinskitchen and Khin has kindly agreed for me to post this recipe. Khin was born and raised in Burma by Chinese-Burmese and Indian-Burmese parents. She lives in the UK now and shares a range of delicious Asian recipes influenced by her mixed heritage, with easy step-by-step instructions. You should definitely take a look at her page. The Secret Garden, Llys Meddyg, Newport, Pembrokes The Secret Garden, Llys Meddyg, Newport, Pembrokeshire, Wales

What an outstanding evening in The Secret Garden at @llysmeddyg last night. Llys Meddyg is a family run hotel set in the heart of Newport, in the Pembrokeshire Coast National Park, an area of outstanding natural beauty. 

We enjoyed a wonderful meal, in one of their many heated dining pods, in the magical Secret Garden. Set up during Covid, this fabulous set up has become a permanent feature. Surrounded by beautiful gardens and fairy lights, we enjoyed an exquisite meal in relaxed and laidback surroundings. The menu celebrates local and seasonal produce and is served by very friendly, helpful and efficient staff. We enjoyed:

- slow cooked lamb (of course - this is Wales!) served with beetroot and caper salsa and locally made feta cheese
- a spicy crab linguine with locally foraged herbs
- some parmesan and truffle chips
- lemon custard with white chocolate
- vanilla mascarpone with coffee sponge and chocolate.

The photographs really do not do these dishes justice at all. The food was really very, very good. 

We finished the meal watching the sun set on Newport Beach. A truly perfect evening!

The Plwmp Tart, Penbryn Beach, Llandysul Absolut The Plwmp Tart, Penbryn Beach, Llandysul 

Absolutely fabulous fresh scones with clotted cream and jam at the fabulous The Plwmp Tart. Mum and I also had a very delicious asparagus and ham quiche and salad but ate half before remembering to take a photograph!) 

This gorgeous local cafe, with a fabulous name, is situated just off the coastal path and 5 mins walk from the beach. It is dog friendly and serves morning coffee, light lunches, and afternoon tea. All the cakes are homemade using local organic eggs and Welsh butter.

Thank you to @llioangharad for recommending this cafe on your feed a while back. I love it! If you are in Ceredigion, West Wales, I really recommend a trip here. Bring your walking shoes and/or beach gear too - there are some wonderful places to visit directly from the car park.

Chopped Italian Pasta Salad This Chopped Italian Chopped Italian Pasta Salad

This Chopped Italian Pasta Salad is loaded with soft cheese, flavourful salamis, both crunchy, fresh and marinated vegetables, olives and pasta and is swathed in a lemony, herby, garlicky cheesy dressing. Perfect for lunch, brunch or supper and ideal for meal prep, shut your eyes when you are eating this delectable salad and I swear, you will think you are in Italy!

I literally threw the kitchen sink at this salad, so the ingredients list is quite long. However, it is an exceedingly forgiving recipe, so simply add whatever appropriate ingredients you have to hand and enjoy. It is also easy to make vegetarian or vegan. Serve either as a stand alone meal, with some fresh bread, or as an accompaniment to a buffet or barbecue.

Restaurant Mine, Falmouth Last night, Emma and I Restaurant Mine, Falmouth

Last night, Emma and I went back to one of our favourite restaurants down here in Cornwall - @restaurantmine in Falmouth  This fabulous gem of a restaurant is located in a little cobbled courtyard yards from the main street. Intimate and cosy, it is friendly, laidback and, very importantly, serves very, very good food. We sat outside on this wonderfully warm and balmy summer evening. 

The kitchen is run by Angus Bell who came to Cornwall with a wealth of experience including working at Le Gavroche in London and being a founding partner of Le Bap. Apparently, he wanted to create a relaxed atmosphere, reminiscent of being at a dinner party. 

They pride themselves on serving locally sourced, seasonal food, all prepared in the kitchen, which happens to be inside the restaurant. The menu changes weekly and each week they offer one meat, one fish and one vegan main course with a choice of starter and either a dessert or cheese to follow.

We chose:

- Crab Fritters and Bisque Mayo - gobbled down before we remembered to photograph!
- Torched Cornish Asparagus with Truffle and Haricot Bean Purée
- Grilled Chicory Salad with Romesco Sauce, Purple Sprouting Broccoli and Smoked Almond Cream
- Pan Roasted Hake, Hazelnut, Brown Shrimp, Lemon and Chrysanthemum Greens
- Warm Potato Salad with Chopped egg and Crispy Leeks
- Lightly Pickled beetroot with House Ricotta and Orange Vinaigrette
- Custard Tart with Strawberries, Elderflower and Clotted Cream
- Chocolate Mousse with Candied Orange, Pistachios and Clotted Cream

Washed down with a cheeky cocktail and some Espiguero Vinho Verde, everything was delicious. It is difficult to pick a stand out dish but, their classic crab fritters were, as ever, outstanding, the hake divine and I was extremely reluctant to share the custard tart!

Absolutely gorgeous Chocolate and Pistachio Cake w Absolutely gorgeous Chocolate and Pistachio Cake with Marzipan Ice Cream and Orange Syrup last night @pandora_inn on the edge of the beautiful Restronguet Creek near Falmouth in Cornwall. I am definitely going to try and recreate this cake at home - it was outstanding. Watch this space.

Parts of Pandora Inn date back to the 13th century but we were outside enjoying the view and basking in the sunshine.
Gorgeous fish pie and smoked mackerel Caesar salad too, all made using locally sourced ingredients.

Watermelon and Feta Salad with Red Onion, Mint and Watermelon and Feta Salad with Red Onion, Mint and Lime

What glorious weather we are having in London at the moment; this salad is 100% meant for these sunny, summer days!

However, I actually made it for Charlotte’s birthday last week. She specifically asked for a healthy meal to include salads and salmon – so that is exactly what she got! We ate this salad with Charlotte’s favourite Smoky, Blackened Salmon, an avocado and mango salad, a red cabbage coleslaw, some sour cream, lime wedges and some wraps to bring it all together. Of course, all the good intentions were forgotten by the time it came round for birthday cake! More of that next week!

But back to this bowl of deliciousness. For so few ingredients, it packs a huge flavour and texture punch, whilst also being incredibly quick and easy to make. The sweet, crunchy watermelon brings a fabulous refreshing sweetness to the salad, which contrasts wonderfully with the salty, creamy feta. The red onion and mint bring further fresh, zingy, sweet and savoury flavours and textures, whilst the acidity in the lime and the chilli kick, finishes it all beautifully! I haven't even mentioned those glorious colours – we are obsessed.

As ever, I went large on the salads, so there were plenty of leftovers – these kept in the fridge surprisingly well and were fabulous for lunch the following day.

THE BEST Chocolate Éclairs and Chouquettes I mad THE BEST Chocolate Éclairs and Chouquettes

I made these incredible chocolate éclairs last night during a 'Jennifer Pogmore’ zoom cooking class. I have been making choux pastry, éclairs and profiteroles for years, and thought I was pretty good. However, these were by far the best I have ever made! By quite a large margin. 

Jennifer shared so many useful tips which actually simplified the process, whilst explaining it, making it more specific, and therefore, more reliable.

Jennifer grew up in the UK, but qualified in French pâtisserie at Le Cordon Bleu in Paris nearly 10 years ago. She currently lives in Perpignan, where she works as a freelance pastry chef in the south of France and runs her own on-line cookery school.

We had people from the UK, USA and Australia on the course, cooking along in our own kitchens, whist learning from Jennifer, in hers. Coffee Blondies with Brown Butter, Chunks of Milk Coffee Blondies with Brown Butter, Chunks of Milk Chocolate and a Coffee Glaze

If you adore brownies and love coffee cake, then these Coffee Blondies with Brown Butter,  Chunks of Milk Chocolate and a Coffee Glaze will be your new coffee cake crush! Melt in the mouth, rich, a little gooey on the inside, oozing with coffee flavour and stuffed with chocolate, they are also topped with a luscious layer of coffee glaze and even more chocolate, grated this time. Chopping the chocolate into different sized chunks adds fabulous texture to the blondies and ensures that you find a number of these nuggets of joy in each and every blondie!

Browning the butter adds a rich, caramelised, nutty unami to these blondies; heavenly served warm with ice cream for dessert but equally, utterly moreish served simply with a cup of tea or coffee.

Chickpea and Red Lentil Curry with Fresh Spinach a Chickpea and Red Lentil Curry with Fresh Spinach and Coriander

Is this Chickpea and Red Lentil Curry with Fresh Spinach and Coriander a curry or a dal? To be honest, I’m not sure! However, I do know that it is incredibly delicious, exceedingly nutritious and quick and easy to make. In short, your ‘meatless Monday’ just got a whole lot easier!

Despite the long list of ingredients, this curry comes together really quickly, and, if you enjoy curries, you should have most of the ingredients already in your store cupboard. Chocolate Biscuit Cake By royal appointment, I gi Chocolate Biscuit Cake

By royal appointment, I give you this delicious Chocolate Biscuit Cake. This wonderful recipe is the last in a series that I am posting to celebrate the Queen’s Platinum Jubilee.

It is a favourite, not just of the Queen, but the whole royal household. Apparently, Prince William requested this recipe for one of the layers of his wedding cake!

A sweet, crunchy, biscuit centre, held together by a light chocolate cream, topped with a layer of rich, dark, smooth,  velvety chocolate ganache, with a hint of salt. I promise you are going to love this cake!

I’ve seen a few very similar recipes on-line, but this one comes directly from ‘A Royal Cookbook’ sold by Buckingham Palace. Whilst I can only assume it is the genuine article, I know, without a shadow of doubt, that it is an extremely delicious and fantastic recipe!

Platinum Jubilee Chicken Tikka with a Curried Mayo Platinum Jubilee Chicken Tikka with a Curried Mayonnaise and Yoghurt Sauce, Fresh Mango, Pomegranate Seeds and Pistachio

Warmly spiced with cumin, coriander, cardamom, chilli and garam masala, these melt in the mouth, chunks of tender chicken tikka, are swathed in a fresh, mild, curried mayonnaise and yoghurt sauce, loaded with fresh coriander and mint. Topped with cubes of sweet fresh mango, toasted pistachios, pomegranate seeds and sliced spring onions, this dish is an explosion of taste and texture.

This recipe pays homage to the original Coronation Chicken, but uses the flavours we are more accustomed to in 2022. With a nod to the original dish, I have christened this recipe: Platinum Jubilee Chicken Tikka!

Just like Coronation Chicken, Platinum Jubilee Chicken Tikka is delicious served with a dressed rice salad. It is also wonderful with some naan bread or quick naan bread, or as I have served it here, using gem lettuce wraps.

Alternatively, it makes a fabulous chicken burger. Serve on a toasted brioche bun with some lettuce, mango chutney and this moreish sauce. Sooo good.
