Peri Peri Marinade

Combine a heady mix of chillis, smoked paprika, hot paprika, oregano and sugar with some garlic, oil, lemon juice, vinegar, fresh herbs and lemon zest and you have the makings of a spicy, tangy, herby, garlic marinade guaranteed to give you tender meat and a huge flavour punch. Most commonly associated with marinating chicken – either a whole or half chicken, breast or thigh meat – this marinade also works well with beef, pork, lamb or even duck.

How to make Peri Peri Marinade

Collect all your ingredients together:

Spice mix –
  • dried red chilli flakes 
  • smoked paprika
  • hot paprika
  • dried oregano
  • sugar
Remaining ingredients:
  • garlic, peeled and chopped
  • fresh parsley or coriander, leaves and small thin stalks can be used
  • olive oil
  • lemon zest
  • lemon juice
  • red wine vinegar
  • fine salt
  • freshly ground black pepper

How to make this fabulous marinade:

  1. Prepare all the ingredients as described in the list of ingredients.
  2. Simply add all the prepared ingredients to the food processor, herbs first, and process until smooth. Transfer to a bowl.
  3. If not using immediately, cover and store in the fridge. Or transfer to a jam jar with a lid.
  4. Use as a marinade for fresh meat and/or fish.

Ingredients

  • 5 teaspoons Peri Peri Spice Mix (see Recipe Notes) 
  • 6 cloves of garlic, 18 – 24g peeled and chopped
  • 8g fresh parsley or coriander, leaves and small thin stalks can be used
  • 2 tablespoons olive oil
  • grated zest of 1 lemon

  • 2 tablespoons lemon juice (roughly 1 lemon)
  • 2 teaspoons red wine vinegar

  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Collect together your equipment (see Recipe Notes below) and ingredients.

  2. Prepare all the ingredients as described in the list of ingredients.

  3. Simply add all the prepared ingredients to the food processor and process until smooth. Transfer to a bowl.

  4. If not using immediately, cover and store in the fridge. Or transfer to a jam jar with a lid.

Peri Peri Spice Mix

  • 5 teaspoons peri peri spice mix, or
    • 1 teaspoon red dried chilli flakes
    • 1 teaspoon smoked paprika
    • 1 teaspoon hot paprika
    • 1 teaspoon dried oregano
    • 1 teaspoon sugar

Equipment:

  • Measuring spoons
  • Sealed container e.g. jam jar
  • chopping board nad knife
  • garlic crusher
  • grater
  • citrus reamer
