Christmas Spice Granola with Pistachios, Coconut and Cranberries

A delicious, crispy granola loaded with the colours and flavours of Christmas – green pistachio nuts, white as snow coconut, ruby red cranberries and a wonderful selection of Christmas spices. The Christmas Spice Mix is a delectable and comforting combination of cinnamon, cloves, ginger, allspice, coriander, cardamom, powdered anise, nutmeg and mace; not only does it taste divine, but the whole house will smell amazingly of Christmas when you cook this flavoursome and crunchy granola.

My Christmas Spice Mix has rather a lot of different spices, but rest assured, you can also make this using a combination of cinnamon powder and mixed spice. I promise you will still love it and it will still taste very Christmassy!

Not only is this a store cupboard, family favourite at this time of year, Christmas Granola makes a fabulous Christmas gift. Present in glass jars or seasonal bags and you have a wonderful, seasonal, practical and tasty crunchy breakfast gift – its always handy to have a super tasty, quick fix breakfast to hand when you have a houseful of Christmas guests and/or a hangover!!

Serving suggestions:

  • Delicious with dairy, coconut, soy or almond milk.
  • Fabulous with yogurt, fresh fruit and/or a dollop of nut butter.
  • Try sprinkled on porridge or over cooked fruit and ricotta, OR
  • Simply eat as is when you need a quick and healthy snack!

How to make Christmas Spice Granola with Pistachios, Coconut and Cranberries

Collect all your ingredients together:

Flavouring and binding ingredients:

  • maple syrup or honey
  • coconut oil or vegetable oil
  • Christmas Spice Mix or a mix of cinnamon powder and mixed spice
  • almond extract
  • vanilla extract
  • fine salt

Oat mixture:

  • porridge oats – I use Jumbo oats
  • puffed brown rice
  • desiccated coconut
  • mixed nuts – I like ½ pistachios plus some almonds, walnuts or pecans and hazelnuts
  • mixed seeds – I use pumpkin, sunflower and sesame

Add after cooking:

  • dried cranberries
  • raisins or sultanas or a mix of both

How to make this delicious granola:

  1. Weigh the maple syrup/honey, oil, Christmas Spice Mix, almond and vanilla extract and salt into a saucepan large enough to take all the remaining ingredients.
  2. Heat over a moderate temperature and melt. Stir well.
  3. Roughly chop the nuts.
  4. Add the nuts and the remaining ingredients (apart from the dried fruit) to the saucepan.
  5. Mix thoroughly and tip out onto a baking parchment lined, large oven tray. (I use the one from inside the oven.)
  6. Level out the granola and bake in the centre of the oven for 45 minutes, stirring well every 15 minutes.
  7. Take out of the oven and leave the granola to cool on the tray.
  8. When cool, add the dried cranberries and raisins and mix well.
  9. Transfer to air tight containers.
  10. This quantity is sufficient for 1 x 1 litre jar. However, I like to collect jars throughout the year and use lots of different sizes.

What is the best way to store this granola?

Kept in an air tight container and stored in a cool, dry place out of direct sunlight, this granola will last for up to 3 months. Make a big batch, I promise you’ll need it!

Ingredients

Flavouring and binding ingredients:

  • 140g maple syrup or honey
  • 70g coconut oil or vegetable oil
  • 1½ tablespoons Christmas Spice Mix or 1 tablespoon cinnamon powder and ½ tablespoon mixed spice (See Recipe Notes for Christmas Spice)
  • 1¼ teaspoons almond extract
  • ¾ teaspoon vanilla extract
  • ¼ teaspoon fine salt

Oat and nuts mixture:

  • 225g porridge oats – I use Jumbo oats
  • 70g puffed brown rice
  • 55g desiccated coconut
  • 150g mixed nuts – I like ½ pistachios plus some almonds, walnuts or pecans and hazelnuts
  • 50g mixed seeds – I use pumpkin, sunflower and sesame

Add after cooking:

  • 80g dried cranberries
  • 80g raisins or sultanas or a mix of both

Instructions

  1. Collect together your equipment (see Recipe Notes below) and ingredients.

  2. Preheat oven to Fan Oven 140°C/160°C/325°F/Gas mark 3

  3. Weigh the maple syrup/honey, oil, Christmas Spice Mix, almond and vanilla extract and salt into a saucepan large enough to take all the remaining ingredients.

  4. Heat over a moderate temperature and melt. Stir well.

  5. Roughly chop the nuts.

  6. Add the nuts and the remaining ingredients (apart from the dried fruit) to the saucepan.

  7. Mix thoroughly and tip out onto a baking parchment lined, large oven tray. (I use the one from inside the oven.)

  8. Level out the granola and bake in the centre of the oven for 45 minutes, stirring well every 15 minutes.

  9. Take out of the oven and leave the granola to cool on the tray.

  10. When cool, add the dried cranberries and raisins/sultanas and mix well.

  11. Transfer to air tight containers.

Equipment:

  • large saucepan
  • kitchen scales, measuring cups and spoons
  • large baking tray lined with baking parchment
  • airtight glass jars with lids

Christmas Spice Mix:

  • 1 tablespoon and ¾ teaspoon cinnamon powder
  • 1 teaspoon ground cloves
  • ½ teaspoon ginger powder
  • ¼ teaspoon all spice
  • ¼ teaspoon coriander
  • ¼ teaspoon cardamom
  • ¼ teaspoon powdered anise
  • ⅛ teaspoon nutmeg
  • ⅛ teaspoon mace

This make 2 tablespoons and ½ teaspoon

(NB 1 tablespoon = 15ml)
