First, make a batch of Double Chocolate Brownie Cookies. You will love these cookies; with their intense chocolate flavour and varying textures, they are easy to make and quick to cook. Make them for morning coffee, afternoon tea or fill a box with them and gift them to a friend. You can even cook a few and then freeze a few, uncooked, and bake them from frozen. Chocolate deliciousness on demand, what’s not to like?

However you decide to serve them, make sure you hold a few back to make this incredible dessert – Double Chocolate Brownie Cookie Ice Cream Sandwiches – utter heaven!

Once you have made the cookies, this dessert is so simple, you really do not need a recipe. However, there are a few tips I want to share.

Collect all your ingredients together:

How to make Double Chocolate Brownie Cookie Ice Cream Sandwiches:

  1. Make the Double Chocolate Brownie Cookies and when cool, take a pastry cutter the same size as the cookies. Allow 2 cookies per person.
  2. Take the ice cream out of the freezer for around 5 – 10 minutes to warm up a little, until it becomes thick but spreadable.
  3. Lay some baking parchment on a flat surface which will fit in the freezer. I use a chopping board. Place the pastry cutter on the parchment and spoon in some ice cream, making them as thick as you like. Mine were around 1½ cms thick.
  4. Flatten the surface of the ice cream and remove the pastry cutter. Make as many as you need and place them in the freezer to harden.
  5. When you are ready for dessert, sandwich the ice cream with the cookies and serve. Heavenly`!

  1. Collect together your equipment (see Recipe Notes below) and ingredients.
