Au Bascou, Paris
Located in the heart of the Marais district, Au Bascou is a Parisian institution. This bistro, run by Chef Renaud Marcille, produces top quality food strongly influenced by Basque cuisine. The Basque country is in the western Pyrenees and straddles both France and Spain on the Bay of Biscay.
Using seasonal food, which mostly comes from master craftsmen and small producers in the south, the menu is constantly changing to account for seasons and availability. I’ve seen this simple and traditional local restaurant described as the place local restauranteurs go to eat, on their day off. There can be no better recommendation than that!
